Send email to desginated address to update CRM automatically using AI

*I'm new to Reddit, so hopefully posting this in the right place. If not, please let me know the best audience.

I would like to create a solution that allows me to send an email to a designated address with notes from a call. I would then like GPT or another LLM to parse the notes and either add a new contact or update an existing contact in my CRM (don't have one yet, but hoping to use Notion or a similarly customizable platform) based upon the notes and my instructions. For example, a message could read: "I met with John Smith, the co-founder of Microsoft. We spoke about potential opportunities to work together. He's going to send me the company materials for their current fundraise. Add John as a new contact and add the included notes." For this message, I would want "John" to be entered as a new contact with "John" in the first name field and "Smith" in the last name field, "Microsoft" in the company field, "Co-founder" in the title field, and the notes I wrote on the meeting in the notes field.

Are there any existing solutions that do this or any straightforward ways to patch this together with Zapier?
